Pop-Up Pizza Business Expanding To Birmingham Metro

Uncle G's Pizza is looking to expand into Vestavia, Hoover and other other parts of Jefferson County.

PELHAM, AL — A Shelby County-based pop-up pizza business is looking to expand into the Birmingham area. Uncle G's Pizza, started by George Gilliam in Pelham as a way to pass time during the coronavirus pandemic, is ready to expand into areas like Vestavia Hills, Hoover and Birmingham, according to a Birmingham Business Journal report.

The concept is part food truck and part restaurant, in that Gilliam does not take walk-up orders. Instead, customers will place orders online to be picked up at a certain time and location.

Gilliam said he hopes to have the pop-up pizza concept in the area by mid-May.
