The Wise Ox Butcher And Eatery To Open In Carlsbad

CARLSBAD, CA — Carlsbad will meet a new butchery this fall, with The Wise Ox Butcher & Eatery opening its second location in November.

The new store will open at The Beacon shopping center on the southeast corner of El Camino Real and La Costa Avenue.

The Wise Ox is part of Trust Restaurant Group, a series of restaurants in San Diego owned by executive chef Brad Wise, whom The Wise Ox is named after.

“I used to live up the hill from The Beacon, and always wanted to bring a piece of our collective to this neighborhood,” Wise said. “Our diners regularly make the drive to visit us in Hillcrest and Mission Hills, so I wanted to give them the opportunity to experience our brand, and the quality of our product, a bit closer to home.”

The Carlsbad location will feature the same sandwich lineup as the original restaurant, including breakfast sandwiches, Philly cheesesteak, double cheeseburger, dry-aged burger and more.

Like the original store, The Wise Ox in Carlsbad will also sell the same cuts of meat used at the restaurant group's other eateries for customers to cook at home, as well as prepared foods, stocks, sauces, marinated meats, local beer and wines.

The restaurant group plans for the new store to look much like its original The Wise Ox, inspired by butcher shops of the early 1900s with a light and bright interior. At 1,314 square feet, the Carlsbad location is similar in size to The Wise Ox in San Diego, though the Carlsbad store will have an expanded patio and won’t have a smoker.

In addition to The Wise Ox's two locations, the restaurant group operates Trust Restaurant, Fort Oak, Cardellino and Rare Society in San Diego, and will open a second Rare Society in Solana Beach later this summer.
