
Peaches are in season in Northern California from late June to September and nearby farmers' markets are offering a local crop from $1.50 per pound.
Pitted "stone" fruit is classified into two different categories: freestone and clingstone, according to the Pacific Coast Farmers' Market Association (PCFMA). Freestone peaches are easily separated from the center stone or pit of the fruit, while the clingstone varieties usually leave flesh attached to the pit. If you prefer one or the other — ask the farmers which kind they have to offer and what will taste best this week.
