How To Roast Pumpkin Seeds For Halloween

Although we would all like to have cozy fall weather while carving pumpkins, the reality is that it is probably 80 degrees wherever you are in the Golden State. Fall weather or not, California is one of the top pumpkin producers in the country and is home to this year's winner of the Safeway World Championship Pumpkin Weigh-Off in Half Moon Bay. We clearly love our pumpkins.

Here's our favorite recipe for baking seeds. These nutritious snacks are packed with fiber and loaded with protein, potassium, and antioxidants. So, don't throw them away!

Separate the seeds in a bowl as you clean each pumpkin. Heat the oven to 300 degrees. Rinse the seeds in cold water and strain. Pat seeds dry with a paper towel. In a bowl, toss the seeds in just enough olive oil to coat.

Spray an edged baking sheet with nonstick cooking spray and spread seeds in a single layer. Season seeds with kosher salt to taste. Bake for 30-40 minutes.

Let cool and enjoy. Seal leftovers in an airtight plastic container.
