Go Green, Salsa Lovers: Head To Your Farmers' Market and Load Up On Tomatillos!

This delicious, easy-to-make salsa combines tomatillos with avocado and serrano chiles.

BAY AREA, CA – There is not a red tomato in sight in this recipe for Green Salsa with Avocado.

Using tomatillos, also known as Mexican husk tomatoes, this recipe from the Pacific Coast Farmers' Market Association makes a great salsa or sauce with these tasty toms, combined with avocado, cilantro, onion, garlic and serrano chiles.

GREEN SALSA WITH AVOCADO

Makes two cups

INGREDIENTS

10 tomatillos, husked, rinsed, and quartered
1 serrano chile, stemmed if super hot
1 clove garlic, destemmed
1/2 small white onion, thinly sliced
1 cup cilantro leaves, loose
1/2 avocado, halved, pitted, and peeled
Kosher salt, to taste
1/2 cup of water to loosen if the salsa is too tight

PREPARATION

Place quartered tomatillos, chiles, garlic, and onion in blender, and blend until vegetables break down and mixture is still slightly chunky. Add cilantro, avocado, and salt and continue to pulse until salsa is blended and creamy but still has some texture. Correct for seasoning and serve.
