Flip Flop Burger Rolls Into Rancho Santa Margarita

The old Akropolis Greek restaurant in the Smart&Final shopping center on Plano Trabuco in RSM has had a wild ride the last few months. First a Hawaiian style food truck had moved in there to make a go of it, but something happened and they left after a couple months. Now there is Flip Flop Burger in the space, although the big sign on the building still has Akropolis, they do have signage on the glass. I tell you all that so you won't be confused when you go to check it out.

I'd read about the new place in the Rancho Santa Margarita Facebook group and thought I'd give it a try. While there weren't a lot of people there, the burgers we got were excellent and the Cajun fries are my new favorite. I went back a couple weeks later with my wife and we got some of the BBQ sandwiches, which were also excellent. I talked to the kid behind the register and found out the owner is opening several of these in south OC, which is ambitious and I hope it works out.

The "About Us" on the company web site has a great short overview that reads: "At Flip Flop Burger Rancho Santa Margarita, our signature style is rooted in big Texas flavors, bringing the very best of the Longhorn State to sunny California. All of our meat is premium, grass fed and never, ever frozen. Our brisket sandwiches are slow cooked Texas style for 16 hours. Flip Flop Burger Rancho Santa Margarita is not in the habit of smashing our burgers. With our innovative flavor, uncompromising devotion to quality and something for everyone, Flip Flop Burger Rancho Santa Margarita is the place for authentic Southern flavor."
