Vegetarian-Vegan Eatery Coming To Olde Town

Arvada's quirky merchandiser Scott Spears will open a plant-based restaurant in the spot of the former Ophelia's.

ARVADA, CO -- From the bearded Arvada businessman who brought Sock!, Scrumptious and Super Zoom Bang Bang, a new restaurant is coming to Olde Town Arvada.

Arvada's quirky entrepreneur and merchandiser Scott Spears will take over the space formerly occupied for 40 years by Ophelia's in the 5700 block of Olde Wadsworth Boulevard. The new restaurant will serve "plant-based" cuisine and will be called So Radish, according to documents filed with the state.

The vegetarian menu will "feature items such as a tempe ruben, deep fried cauliflower, black bean burgers and pineapple upside down cake. But there will also be the option for meat eaters to add on to their plant-based dishes. There will also be canned beer, kombucha on tap and full cocktail service," according to the Arvada Press.

The restaurant will also be remodeled, Spears told reporter Shanna Fortier.

“The goal is to make it funky and weird and different,” Spears said. “It’s really going to be rad.”

Spears owns another restaurant in Olde Town, School House Kitchen and Libations.

“It’s apparent that the restaurants in Arvada and Olde Town have helped make it a destination, and adding a plant-based eatery provides even more variety for residents and visitors while also offering more choices to vegan and vegetarian diners,” Daniel Ryley, deputy director of the Arvada Economic Development Assn. told the Arvada News.
