Health Focused SoBol Restaurant Looking to Expand to Madison
The growing franchise has stores all over the East Coast and is opening soon in Ridgefield; next it wants to open one in Madison.
MADISON, CT - With an opening in Ridgefield set for the end of July, acai bowl and health-focused concept SoBol is looking to further grow in Connecticut, planning to bring a unit to Madison sometime in 2019.
SoBol first introduced its acai bowls in 2012, and the brand has since grown to 20 locations throughout the East Coast.
Each SoBol location serves up to 100,000 customers and a shop in Madison would bring more than 20 jobs to the area, according to its owner.

The brand is looking for local entrepreneurs who are interested in inspiring locals to live a healthier lifestyle and build strong community relationships through SoBol.
SoBol offers eye catching super fruit bowls and smoothies. Customizable acai and pitaya bowls are blended, layered with homemade granola, topped with fresh fruit, coconut and drizzled with honey.

Inspired by his family’s successful ice house, Jason Mazzarone created the Acai Café in 2012. Mazzarone took his culinary arts degree and background as a chef and teamed up Co-founder Jim Kalomiris, a long time family friend with more than 20 years experience in restaurant management, real estate and construction.
Since opening, Sobol has grown rapidly and is a franchised brand.
In an interview Tuesday, Mazzarone said he has family on the Connecticut shoreline and while “he hasn’t spent a ton of time in Madison” the town is the kind of demographic that his team believes will take to SolBol.
He said his team doesn’t have a definite location in town picked out but he reiterated that Madison “is a good fit for us.” He said if things go according to plan it would take “three to six months” to cement a franchising deal and location for a SolBol in town.
“Our brand is a healthy alternative for breakfast, lunch, even dinner. A great, quick meal at an affordable price,” said Mazzarone.
Mazzarone said the goal is to eventually open in about 35 locations in Connecticut.
“Connecticut seems like a great stepping stone for us,” said Mazzarone, adding that the overall goal is to go national with the brand.
