Wood-Fired Pizzeria Coming to Safety Harbor
Greg Seymour plans to open his Pizzeria Gregorio sometime in the near future.
It’s been well documented that the restaurant scene in Safety Harbor is in the midst of a major boom period.
In the past seven months alone a half dozen eateries have opened in the area, each boasting its own signature style, menu and desire to be a part of the community.
Soon another name will be added to the list – Pizzeria Gregoria, a wood-fired pizza place located on the corner of Fourth Avenue North and Second Street North, should be opening in the near future, according to owner Greg Seymour.Â

“We’re going to open sometime soon, a soft opening at first so we can make sure we iron out all the kinks at the beginning,” Seymour said while working on the building last week.
“Then once we get up and running, we’ll do an official grand opening that’ll hopefully draw a big crowd.”Â

Although this is the first restaurant he’s owned, Seymour has extensive experience in the industry.
He has worked in high-end restaurants all over country, including in California and Boston, during a career that has spanned more than three decades.
And having worked with some of the top pizza chefs in America, he knows his concept is a good one.Â
“The concept is simple – we’re going to offer wood-fired pizzas in a casual, sit-down dining setting,” Seymour said.
“We’re also going to offer salads and desserts as well as healthy and gluten-free options,” he added. “My goal is to get the place green certified sometime in the future.”
Seymour is confident his restaurant, which is in the former home of the Crimson Moon Spa at 400 2nd St. N., can be a success.Â
But he’s not overconfident to the point of being cocky.Â
“I believe I’m going to succeed and I hope I’m going to succeed, but I’m not arrogant enough to say I am going to succeed.”
He realizes the area is growing fast, and he just wants to fit in with the blossoming Safety Harbor dining scene.
“I know this business is wrapped around me, but it’s not about me,” he said. “It’s about the community.”
“I think this place fits the vision of the community, and I look forward to being a part of it.”
