Observations: Waffle batter and fruit salad were not cooled to 41 F or below within 4hrs. Eggs were placed back into cooler after 4hr holding time was exceeded. Sausage was not labeled per written procedures. Grits were not included on the written procedure in advance.Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.Observed employee blowing into gloves before donning new gloves. Employee was instructed to re-wash hands and obtain new gloves. Gasket around the ice machine door is deteriorating and breaking apart. Several floor tiles are broken/missing in kitchen.
