A look at the most recent Dacula restaurant inspections.

The health department is tasked with ensuring restaurant compliance with applicable health and safety regulations. The following restaurant scores are the most recent scores posted on the Gwinnett, Newton, Rockdale Health Departments website as of April 16.

  • Violation of Code: [.07(2)(i) ] SOME LIGHT BULBS DO NOT HAVE SHIELDING. SOME SHIELDS IN THE STORAGE ROOM AND OVER DESK ARE BROKEN LEAVING LIGHT BULBS WITHOUT SHIELDING. NO SHIELD IS ON THE BULB IN THE WALK-IN FREEZER. THE LIGHT BULBS ARE NOT SHATTERPROOF. REPLACE MISSING AND BROKEN LIGHT BULB SHIELDS/COVERS.  New Violation.

  • Violation of Code: [.07(5)(h) ] Hand wash sink in kitchen area blocked by utensils. Utensils moved. Keep hand wash sinks clear of obstructions at all times.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(f) ] Real butter being held without temperature and no time controls in place. Discussed procedure for holding potentially-hazardous foods under time control. Gave person in charge handouts and reviewed procedures. Butter that was standing had been out less than 4 hours so allowed facility to place it under time control. Make certain all potentially hazardous foods are kept under either time or temperature control. Written procedures are required for time control.  Corrected On-Site.  Repeat Violation.
  • Remarks: This inspection is a required additional routine due to receiving a score below 80 on a previous routine inspection. Please note that 6-1A (cold holding)is a repeat violation from the previous routine inspection. If this same code provision is a violation on the next routine inspection, the permit may be suspended.

  • Violation of Code: [.04(6)(f) ] Cold-held potentially hazardous foods not maintained below 41F. All cold held potentially hazardous foods must be maintained at 41F or below. All foods not in compliance were either discarded or moved to the walk in cooler.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(a) ] Ambient temp of drawers under grill 48F and 2 dr cooler across from grill 57F. All equipment must be maintained in good repair. Coolers will not be used for storing potentially hazardous foods until repaired or replaced.  New Violation.
  • Remarks: Unfinished dry storage shed in back of restaurant may only be used for unopened packages of non-potentially hazardous foods. Foods that are opened must be moved inside the kitchen area.
  • Menu has items that are not served raw or under cooked asterisked. Only the items that can be ordered to the customers liking need to be asterisked. PIC stated that only steaks and huevos ranchero can be served undercooked. Advised PIC to send new menu prior to printing for pre-approval.

  • Violation of Code: [.03(5)(j)1&2 ] Observed employee thermos and cup with no straw and lid in kitchen. Drinks removed from kitchen. Employee drinks should be in a single service cup with a straw and a lid.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(n) ] Dishmachine was not dispensing sanitizer at time of inspection. Machine was fixed and began dispensing the correct levels of sanitizer by the end of inspection. Food contact surfaces should be cleaned and sanitized.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(6)(b) ] Found several chemical bottles in kithen area not labeled. Bottles labeled at time of inspection. Chemicals should be labeled with common name if not in original container.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(c)] Observed several bulk packages of beef being thawed at room temperature. PIC put beef in running water. Approved method should be used when thawing food.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(3)(g) ] Facility does not have a working digital thermometer. Obtain a working digital thermometer.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(g) ] Fruit and Vegetable sink had batter and raw chicken particulates. Chicken and batter removed from sink and sink was wash and sanitized. Fruit and vegetable sink should be used for washing fruits and vegetables only.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(n) ] Observed employee leave kitchen then return and work with ready to eat with the same pair of gloves. Had employee remove gloves and wash hands. Gloves should only be used for a single purpose that does not pose a risk of contamination.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(1)(a) ] Paper towels being used to line the bottom of food containers. Papertowels removed. Only food grade paper can be used in contact with food.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(q) ] Desert display cooler had an ambient air temperature of 44.4oF. Coolers should be maintained at 41oF or below. Repair.  New Violation.

  • Violation of Code: [.03(5)(g) ] AN ENGAGEMENT RING WITH A DIAMOND ON IT WAS BEING WORN BY AN EMPLOYEE WHO WAS DOING FOOD PREPARATION. NO GLOVES WERE BEING WORN. I TOLD THE MANAGER AND SHE HAD THE EMPLOYEE REMOVE THE RING FROM HER HAND. THE EMPLOYEE WASHED HER HANDS. EMPLOYEES MAY ONLY WEAR A SOLID BAND ON THE FINGER WITH A GLOVE OVER THE RING DURING FOOD PREPARATION.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(g) ] DETERGENT WAS NOT BEING DISPENSED IN THE WAREWASHING MACHINE WHEN WARE WAS BEING WASHED. THE DETERGENT CONTAINER WAS EMPTY. REPLACE THE EMPTY CONTAINER WITH A FULL ONE. A NEW FULL CONTAINER OF DETERGENT WAS INSTALLED AND PRIMED. DETERGENT WAS BEING DISPENSED IN THE WAREWASHING MACHINE DURING THE WASH.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(2)(i) ] SOME LIGHT FIXTURE COVERS ARE NOT COVERING THE LIGHT BULBS COMPLETELY. PROPERLY CUT AND INSTALL COVERS FOR THE LIGHT FIXTURES SO ALL THE LIGHT BULBS WILL BE COMPLETELY COVERED.  New Violation.

 

Riverside Pizza

  • Violation of Code: [.04(4)(a) ] Observed employee touch two orders bread sticks with bare hands while putting prepared bread on deli paper with spatula. Bread sticks discarded. No ready-to-eat foods may be touched with bare hands.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(d) ] Two containers of pizza sauce in walkin cooler prepared yesterday were not cooled to 41 within 4 hours. Center of sauce was 46 and 47 and outside was 41. Sauce discarded. Pizza sauce must be cooled to 41 within hours after preparing.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(e) ] Pizza sauce cooled not using effective methods. Pizza sauce placed in large containers with lids and stacked in walkin cooler to cool. Pizza sauce discarded at time of inspection. Containers should not be stacked and should be have containers uncovered or vented to allow sauce to cool.  Corrected On-Site.  New Violation.
  • Violation of Code: [.03(5)(i) ] Person in charge not wearing a hair restraint while preparing pizzas. Hair restraint must be worn if hair is longer than 1/2 inch.  New Violation.

 

Waffle House

  • Violation of Code: [.03(5)(c) ] Observed both cooks changing gloves several times without washing hands. Hands must be washed when changing gloves to handle food. Both employees were advised and washed hands.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(f) ] Cold-held potentially hazardous foods not maintained below 41F. All cold held potentially hazardous foods must be maintained at 41F or below. Foods not in compliance were discarded. **Please note that if this is marked as a violation on the next routine inspection, permit may be suspended.**  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.04(4)(n) ] Observed employees touching raw bacon then touching clean plate, using sanitizer towel then touching bread, cracking eggs then handling food. Gloves are single use items and must be changed when going from task to task. Both employees were advised and gloves were changed.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(a) ] Gasket on cooler broken causing door to stay open at times, rusted shelves in coolers, coolers leaking water (being caught in pans). All equipment must be maintained in good repair.  Repeat Violation.
  • Remarks: Thermocouple calibration 32.1F, Lollipop calibration 33.5F, Reinspection will be done WITHIN 10 days. A required additional routine will be done within 30-60 days.
