Violations: 1-2, Violation of Code: [.03(2)(a)-(n) ] Manager in charge did not have control overr the food safety at this facility. Evidence includes improper cooling of foods, untrained food employee in food safety, improper handwashing. Need to have a certified food safety manager on-site or someone who is knowlegeable at all times. New Violation. 2-1B, Violation of Code: [.03(5)(c) ] Employee working in kitchen did not wash hands before putting on gloves to handle cooked chicken - Had Employee discard chicken and go wash his hands and put on gloves. Employee came out of bathroom and went straight to work with clean utensils without washing hands first. - Had employee wash hands and discard single use utensils she had handled. Employee changling gloves while working with ready to eat food but did not wash hands between glove changes. - Had employee wash hands and put on new gloves. Employees must wash hands at proper times.  Corrected On-Site. New Violation. 2-1C, Violation of Code: [.04(4)(a) ] Upon arriving for the inspection two employees were cutting up celery bare handed - Had employees discard celery. - Must have a suitable barrier between ready to eat food items and hands. New Violation. 2-2B, Violation of Code: [.03(5)(j)1&2 ] Four employee drinks sitting on top of cooler (2 watere bottles and two coffee cups) - Had manager move cups to back office area. Must use suitable cups for employees drinks in kitchen area. (Single use cup with a lid and straw stored where it cannot contaminate food surfaces, utensils, or food items. Corrected On-Site. New Violation. 2-2D, Violation of Code: [.07(3)(a) ] No soap at front hand sink. - Had employee put more soap out at sink - Must have soap at all handsinks at all times. Corrected On-Site. New Violation. 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw beef stored with cooked ham in freezer in open containers - Had employee stored foods properly. Raw eggs sitting in direct contact with raw chicken in reachin cooler - had manager rearrage foods so they were stored properly. Employee handling raw beef for philly sandwich and then handle bread. - Had manager discard bread, go wash hand, and put on new gloves. Raw beef in prep cooler stored over sauces. Had manager rearrange food items so they were stored properly. Must keep all foods separated and protected. Corrected On-Site. Repeat Violation. 5-1B, Violation of Code: [.04(5)(f) ] Rice in rice warmer reheating for two and a half hours minimum was at 71F. Had manager discard food. Must reheat food items using proper reheating times and temperature perameters. Food must rapidly reheat to 165F within 2 hours. Corrected On-Site. New Violation. 6-1A, Violation of Code: [.04(6)(f) ] 10 bags of fries sitting out under counter on shelf with no temperature control - Most bags of fries were around 66F and had been sitting out for around an hour and a half. Had manager start to cool them back off in cooler - Miscellaneous other food items in reachin cooler were not being held below 41F. New Violation. 18, Violation of Code: [.07(2)(m) ] All of the doors of the establishment were open upon arrival for inspection - Had manager close doors. There were no screens on doors, except the back door. Must protect outter openings of the facility to protect against insects entering the facility.
