Advised PIC and employee that bare hands can not be used when handeling ready-to-eat foods. Lemons cooked to 165oF or great. Then observed same employee handle shredded cheese. Cheese cooked to 165oF. Ready-to-eat foods should not be handled with bare hands, a sutiable barrier should be used. Corrected On-Site. New Violation. 8-2B, Violation of Code: [.07(6)(g) ] Sanitizer above 200 ppm for chlorine sanitizer. Sanitizer discarded and new sanitizer provided. Chemical sanitizer should be at the appropriate levels.  Corrected On-Site.  New Violation.
