Violations: 1-2, Violation of Code: [.03(1)(a)-(c) ] Person in charge did not know the minimum cook temps for chicken, beef, or fish. Person(s) in charge need to be able to demonstrate knowledge of food safety in order to protect the public from illness. Cook temps were discussed during the inspection and reviewed during inspection.  Corrected On-Site.  New Violation. 6-2, Violation of Code: [.04(6)(g) ] Several containers of rice cooked more than 24 hours ago did not have a date mark. Ready-to-eat food items cooked or prepped that are held in restaurant more than 24 hours need to be date marked for a seven day shelf life. Rice was marked during inspection  Corrected On-Site.  New Violation. 14D, Violation of Code: [.04(4)(n) ] Employees are using multiple sets of gloves at the same time(putting on plastic gloves, then putting on a cloth glove over that glove, then putting a plastic glove over the plastic glove. This is not acceptable. Gloves are single use only and can only be worn one pair at time. Person in charge explained that the cloth glove was to protect the hand from heat. Please figure out an alternative way to protect hand from heat that allows employee to wear one set of gloves at time, and eliminate the cloth glove. Employees wore one set of gloves for the remainder of the inspection.  Corrected On-Site.  New Violation. 15A, Violation of Code: [.05(2)(c),(d) ] In-use fryer baskets used for chicken, fish, shrimp, and fries had broken wires. Equipment needs to be kept good condition, broken wires are potential choking hazard. Please discard baskets with broken wires at the end of the night.  Repeat Violation.
