The sandwich shop had several violations, including an employee not wearing a hair restraint.

Violations: 1-2, Violation of Code: [.03(3)(a)-(d) ] Facility does not employ a certified food safety manager. Manager to retest on Wednesday. Facility must employ a certified food safety manager. Will follow up as needed to ensure manager takes and passes certification exam OR an employee with certification is employed at this location.  New Violation. 12B, Violation of Code: [.03(5)(i) ] Employee working with exposed food not wearing a hair restraint. Employee put visor on, but due to hair style, visor is not effective. Employees preparing and/or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch (1/2").  New Violation. 12C, Violation of Code: [.04(4)(m) ] Used cloth towel sitting on table. Had facility re-locate cloth towel to sanitizer solution. Must store cloth towels in sanitizer between uses. No chlorine in sanitizer solution. Had facility prepare fresh sanitizer with 100PPM chlorine. Must maintain safe, but adequate level of chlorine.  Corrected On-Site.  New Violation. 12D, Violation of Code: [.04(4)(g) ] Employee taking whole tomatoes out of cardboard box and cutting them. According to staff, the tomatoes were washed & placed back in box. Some of the tomatoes were spoiled. Had facility label box as spoiled, return. Had facility take a new box of tomatoes, wash at designated vegetable prep sink, & then place into clean container. Except as specified in 2 of this subsection and except for whole, raw fruits and vegetables that are intended for washing by the consumer before consumption, raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. **Facility stated that they toss out the spoiled tomatoes as they find them.  Corrected On-Site.  New Violation. 17B, Violation of Code: [.06(5)(o),(p) ] Dumpster area not clean. Right dumpster not plugged. Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place.  Repeat Violation. 17D, Violation of Code: [.07(4)(b) ] Employee personal belongings stored with food service food/supplies. Had facility separate items. Employees need to store their personal items separate from food service food, supplies, equipment to prevent contamination.  Corrected On-Site.  New Violation.
