The wing restaurant scored a 39 earlier in the year. Also, Papi's passed their follow-up.

Violations: 1-2, Violation of Code: [.03(2)(a)-(n) ] Person in charge was not performing duties to ensure that food is properly cooling, food is stored in a manner to prevent contamination, and potentially hazardous foods are cold-holding at or below 41oF. It is the repsonsiblity of the person in charge to ensure food safety.  New Violation. 2-2D, Violation of Code: [.07(3)(a) ] Soap is not available at back handsink in kitchen area. Fix soap dispenser so that it may dispense soap or provide a bottle of soap. All handwashing sinks must have soap available for use.  New Violation. 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] 1.Raw beef for philly cheesesteaks stored above sauces (ketchup, honey mustard, hot sauce, etc.), coleslaw, and butter in front prep area cooler. Raw beef was moved to bottom of cooler. 2. Cooked chicken wings stored on raw chicken and next to/under shelled eggs with some eggs cracked and leaking yolk. Items were rearranged. 3. Raw beef stored on top of raw eggs in chest cooler. Items were rearranged by final cook temperature requirement. 4. Raw fished stored in empty commercial box that previously held raw chicken. Fish was removed from box.  4. Raw beef stored over cooked turkey in freezer. Raw shrimp stored over vegetable rolls and cooked gyro meat in freezer. Items were rearranged by final cook temperature requirement.  Items must be stored in a manner that prevents contamination.  Corrected On-Site.  New Violation. 4-2B, Violation of Code: [.05(7)(a)1 ] Fryer basket stored as clean had accumulation of black build-up on rim. Utensils (spatulas, vegetable peeler, etc) were stored as clean in a sanitizer bucket and had food debris and residue. Items were rewashed. All food-contact surfaces and equipment must be clean to sight and touch.  Corrected On-Site.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Butter, cheeses, noodles, and oyster sauce were above 41oF. Items were discarded. All cold-holding potentially hazardous foods must be held at/below 410F.  Corrected On-Site.  New Violation. 6-1C, Rice prepared the previous day had not cooled down to 41oF. Item was discarded. All potentially hazardous foods must be cooled from 1350F-70oF within 2 hours and then down to 41oF or below within an additional 4 hours. Recommendation: Divide rice into smaller batches or use an ice bath to help items cool down faster  Corrected On-Site.  New Violation. 6-2, Violation of Code: [.04(6)(g) ] Rice, cole slaw, and hot dogs held more than 24 hours were not date marked. Preparation dates were added to items. All potentially hazardous foods must be date marked once prepared (or package is opened if commercially prepared) and discarded within 7 days.  Corrected On-Site.  New Violation. 10D, Violation of Code: [.04(8)(b) ] Observed expired foods in 1 door refrigerator: Hamburger buns with best by date of October 10 and November 18th; hot dog buns with best by date of July 13; sandwich subs with best by date of October 10th. Discard items. All commercially packaged foods must be discarded by best by,use by, or expiration date.  New Violation. 15A, Violation of Code: [.05(6)(a) ] One door refrigerator and 2 door refrigerator in back of kitchen were not maintaining at a low enough temperature to ensure potentially hazardous foods stay below 41oF. The 2 door refrigerator was adjusted to proper temperature. Adjust the 1 door refrigerator temperature. All equipment must be in good repair and proper adjustment.  New Violation. 17B, Violation of Code: [.06(5)(o),(p) ] Observed trash piled around dumpster (on sides and behind dumpster). Clean around dumpster. Refuse areas must be maintained to prevent accumulation of trash and to prevent attraction of pests.  New Violation. 17B, Violation of Code: [.06(5)(n) ] Observed lid on dumpster open. Receptacle lids must be closed.  Repeat Violation. 17D, Violation of Code: [.05(3)(d) ] Ventilation hood above fry station had accumulation of grease that has begun to drip down. Clean vent hood to ensure that grease does not fall down into food. Vent hoods must be cleaned with adequate frequency to prevent build-up of grease.  New Violation. 18, Violation of Code: [.07(5)(k) ] Observed live roach and roach feces in box of platic wrap. Observed dead roach and feces in prep area by freezer. Pests must be controlled.  Repeat Violation. 18, Violation of Code: [.07(2)(m) ] Observed back door open at beginning of inspection. Employee closed door. Outer openings must be protected at all times to minimize pests.  Corrected On-Site.  New Violation.

Violations: 8-2B, Violation of Code: [.07(6)(c) ] Container of sanitizer being used to sanitize drink dispenser in bar area was observed stored above the ice bin used for beverages. The container of sanitizer was removed; the sanitizing solution should be stored on the metal table surface on the right of the ice bin. Chemicals must be stored in a manner that prevents contamination of food by spacing (lateral spacing or under food) or partitioning.  Corrected On-Site.  New Violation. 10D, Violation of Code: [.04(8)(b) ] Container of heavy whipping cream in the bar reach in cooler was observed with a date of 11/19/2013. The cream was discarded. Commercially packaged foods must discarded by the manufacture's expiration dates.  Corrected On-Site.  New Violation. 12C, Violation of Code: [.04(4)(m) ] Wet wiping cloths were stored in sanitizer observed with chlorine concentrations below 50 ppm. The sanitizer solutions were remade to the proper concentrations. Wet wiping cloths used for food contact surfaces must be stored submerged in sanitizer of adequate concentration.  Corrected On-Site.  New Violation.
