Violations: 11A, Violation of Code: [.04(6)(e) ] Large portion of corned beef left to cool on metal sheet pan in the walk-in cooler. Thick portion of corned beef needs to be sliced in half to assist the cooling process. The thinner portion in front of it is already at 75F after cooling for the same amount of time. Ensure that effective cooling methods are used: shallow pans, small portions, ice baths, etc.  Corrected On-Site.  New Violation. 14B, Violation of Code: [.05(10)(g)2 ] Several soup spoons are not stored with the food-contact surfaces inverted. Servers pull these spoons without wearing gloves. So, the spoons must be stored with the handles turned upward to protect the food/lip-contact surfaces.  Corrected On-Site.  New Violation.
