Peruvian Restaurant's Permit Suspended: Restaurant Inspections May 23
Sabor Inka on Pleasant Hill Road received two consecutive U's on inspections. A Mexican restaurant also scored a U.

Violations: 1-2, Violation of Code: [.03(2)(a)-(n) ] Manager not performing responsibilites as required. Ex. improper hot holding, improper cold holding, bare hand contact with ready to eat food, food not separated and protected, etc.) Educated manager on proper food safety procedures. Person in charge must perform their responsibilites as requred per the food code.  Corrected On-Site.  New Violation. 2-1C, Violation of Code: [.04(4)(a) ] Manager handling cooked chicken with no gloves on. Had manager discard chicken. Must not handle ready to eat food barehanded. Use a suitable barier (ex. gloves, tongs, etc.)  Corrected On-Site.  Repeat Violation. 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw beef being prepared immediately adjacent to ready to eat vegetables on the same prep table; Raw beef and sausage stored above pepper in freezer; ready to eat raw swai stored below raw squid in prep cooler - Had employees rearrage food items so they were stored properly. Had employees prepare raw and ready to eat vegetables at different times. Must keep food separated and protected during storage and preparation.  Corrected On-Site.  Repeat Violation. 4-2B, Violation of Code: [.05(7)(a)1 ] Many utensils stored as clean were actually dirty with old food debris on them (can opener blade, knives, spoons, etc). Had manager wash all unclean utensils. Must store utensils clean to sight and touch. This is not a repeat violation because the last report, although it was a violation, it had the wrong code provision.  Corrected On-Site.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Food items in prep cooler were all 46F or above. Had manager move food items back to reachin cooler to cool items down. They had been put in the prep cooler about 2 hours before I checked the temps. Must cold hold food items at 41F or cooler.  Corrected On-Site.  New Violation. 6-1B, Violation of Code: [.04(6)(f) ] Chicken broth and seafood broth on stove top hot holding was below 135F. See temps above. Had manager reheat foods to hot hold to proper temps. Must hot hold food items at 135F or above.  Corrected On-Site.  New Violation. 14A, Violation of Code: [.04(4)(k) ] Utensils on stove top stored in water at 125F. Had manager heat up water to 135F. Must store in-use utensils properly.  Corrected On-Site.  Repeat Violation. 15A, Violation of Code: [.05(6)(q) ] fryer baskets in disrepair with broken wires, prep cooler not functioning properly. Must maintain equipment in good repair and proper calibration. Repair cooler as soon as possible. Manager discarded fryer baskets on-site.  New Violation. - Your permit is suspended due to having two consecutive U's in a row on routine inspections. You must come to our office for a compliance conference before the permit can be reinstated. A corrective acion plan must be completed and brought into the meeting. Violations: 2-1B, Violation of Code: [.03(5)(c) ] Observed employee come in from outside, put on gloves and proceed to handle foods without washing hands. Hands must be washed before putting on gloves to handle to eat foods and any other time when they are contaminated. Employee was corrected, hands were washed and gloves were changed.  Corrected On-Site.  New Violation. 2-1B, Violation of Code: [.03(5)(b) ] Observed 2 employees on several occassions "wash" hands without using soap. Hands must be washed with warm water, soap, and then dried with paper towel. Employees were advised and hands were washed properly with soap.  Corrected On-Site.  New Violation. 2-2B, Violation of Code: [.03(5)(j)1&2 ] Observed 3 employee beverages in approved containers stored with food. Employee beverages must be stored in a single use cup with a lid and straw stored away from food, prep areas, clean equipment, single service items, and clean linen. Drinks were discarded.  Corrected On-Site.  New Violation. 3-1A, Violation of Code: [.04(5)(d) ] No parasite destruction letter provided for salmon that may be ordered undercooked on lunch special menu. Advised PIC that he must obtain a parasite destruction letter from each supplier he gets salmon from and may not serve salmon undercooked until it has been received and approved by Health Authority.  New Violation. 4-2B, Violation of Code: [.05(7)(a)1 ] Cheese shredder, hand held peelers, measuring spoons, and onion core apparatus stored "clean" with food debris. All food contact surfaces must be stored clean to sight and touch. All were washed during inspection.  Corrected On-Site.  New Violation. 4-2B, Violation of Code: [.05(6)(n) ] No chlorine sanitizer being dispensed at dish machine. Dish machine was actively being used during inspection. All food contact surfaces must be washed, rinsed and sanitized with sanitizer at appropriate concentration. Chlorine sanitizer must be at 50-100pp. Dish machine company was called during inspection. 2 compartments at dish sink were set up with chlorine sanitizer to use after washing in dish machine temporarily until fixed.  Corrected On-Site.  New Violation. 6-1C, Violation of Code: [.04(6)(d) ] 6 pans of black beans and 2- 5 gallon containers of chicken broth cooked the previous night observed in cooler at temperatures greater than 41F. All cooked potentially hazardous foods must be cooled from 135F to 70F within 2 hours sand from 70F to 41F within 4 hours. All foods not in compliance were discarded.  Corrected On-Site.  New Violation. 8-2B, Violation of Code: [.07(6)(g) ] Facility using Orange Multi surface cleaner as sanitizer. Observed bag of chemical being used in dispenser. Package indicates that it food contact surfaces must be rinsed after using product. Sanitizer must approved to be used on food contact surfaces as last step and should not require a final rinse step. Bleach was obtained and used in sanitizer buckets.  Corrected On-Site.  New Violation. 14A, Violation of Code: [.04(4)(k) ] Handles on scoops stored down in raw beef and raw chicken. All handles must be stored up out of product while not in use. Scoops were removed and new scoops were placed in foods with handles stored up. **Please note that this is a repeat violation.**  Corrected On-Site.  Repeat Violation.
