Another Thai restaurant was re-inspected after previously scoring a 38.

Violations: 12A, Violation of Code: [.04(4)(q) ] Remaining unused portion of coconut milk is being stored in the original opened can. Pour the remainder of the coconut milk into a food grade container. Discard the can. Once opened cans may corrode and accumulate rust which creates a risk of contamination to food. Any remaining portion of the food saved for later use must be transferred into a food-grade container.  Corrected On-Site.  New Violation. 15A, Violation of Code: [.05(1)(a) ] Traditional bowl and pestle are being used to grind cloves of various dry ingredients. The bowl and pestle are porous and have residue trapped in crevices. Do not use the mortar and pestle in the facility. These pieces of equipment do not meet the general requirements for materials approved for use in a food service establishment. Materials that are used in the construction of utensils and food-contact surfaces of equipment may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be safe, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition.  New Violation. 17D, Violation of Code: [.07(4)(b) ] Some employee personal effects are stored on the prep table (keys and cellular phone). Remove the items from the food preparation table. Place them in a separate location which will prevent contamination of food, food-contact surfaces, clean equipment, etc.  New Violation.

Violations: 2-1C, Violation of Code: [.04(4)(a) ] Employees observed touching ready to eat basil with bare hands at the start of inspection. The person in charge discarded the basil. All ready to eat food items should not be touched with bare hands to help prevent possible contamination.  Corrected On-Site.  New Violation. 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Four batches of cooked chicken observed cooling in used raw chicken boxes. These items were cooling for around 30minutes and were recooked to above 165 degrees to continue cooling in proper containers, the raw chicken boxes were discarded. Cooked food should not be stored in raw meat containers to help prevent possible cross contamination. Raw animal foods must be separated from each other during storage, preparation, holding, and display.  Corrected On-Site.  New Violation. 6-1D, Violation of Code: [.04(6)(i) ] Several items on time control were found still in use after the time marked had expired, the facility was still using noodles and rice that expired at 4 at 4:30. The person in charge discarded these items and all other items that were marked to expire at 4. All items on time control must be used or discarded by the time identified.  Corrected On-Site.  New Violation. 10D, Violation of Code: [.04(4)(d) ] Items at the cook cart were found in working containers and were not labeled with the common name of the food item. The person in charge was advised to properly label these items including salt, sugar, msg among others.  New Violation. 11A, Violation of Code: [.04(6)(e) ] Chicken observed cooling in deep containers and noodles cooling in covered container were not making proper progress in cooling to 41 degrees within 6 hours. The person in charge moved the noodles to an ice bath and moved the chicken to more shallow containers to finish cooling. Potentially hazardous foods must be cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.)  Corrected On-Site.  New Violation. 12C, Violation of Code: [.04(4)(m) ] Two buckets of in use wet wiping cloths were found stored in chlorine sanitizer that was below 50ppm. The person in charge remade the sanitizer to the proper concentration of 50-100ppm. In use wet wiping cloths should be stored between use in proper sanitizer (100ppm chlorine or 300ppm quat).  Corrected On-Site.  New Violation. 14C, Violation of Code: [.05(6)(r) ] Single use soy sauce buckets observed being reused to store food. The person in charge was advised that these buckets are single use and are not easily cleanable for reuse.  New Violation.

Need to clean equipment and shelves often enough to prevent accumulation of old debris. Need to have clean by next inspection.  New Violation. 17C, Violation of Code: [.07(5)(a),(b) ] Floors and walls are dirty (mainly behind equipment and shelves) - Need to keep floor and walls cleaned at all times.
