Dead Flies Found Near Grits at a Waffle House: Restaurant Inspections November 12

Violations: 2-2A, Violation of Code: [.03(4)(a)-(f) ] Person in charge was unable to demonstrate knowledge of employee health policy (all the signs/symptoms to look for, all 5 of the most common foodborne illlness, and when to report to the health department). Policy was reviewed with person in charge. Person in charge and employees must know of the sign/symptoms to look for when assessing employee health, the most common foodborne illnesses, when to restrict/exclude employees, and when to report to regulatory authority.  Corrected On-Site.  New Violation. 4-2B, Violation of Code: [.05(7)(a)1 ] Lemon slicer, tomato slicer, mixer, and cutting boards stored as clean had food debris and particles on them. Items were washed. All food-contact surfaces must be clean to sight and touch.  Corrected On-Site.  Repeat Violation. 6-1A, Violation of Code: [.04(6)(f) ] Sliced cheeses (cheddar and pepper jack) and sliced tomatoes stored in prep area in an ice bath with the ice only in contact with the bottom of the containers, not with the sides of the containers. Items were above 41 degrees Fahrenheit. Items were discarded. Ensure all potentially hazardous foods being cold-held are maintained at 41 degrees Fahrenheit or below. Recommendation: put less product in the containers and ensure ice bath surrounds all sides of the containers  Corrected On-Site.  New Violation.

Violations: 2-2D, Violation of Code: [.06(2)(o) ] Observed employee using handwashing sink to wash dishes. Person in charge was told to inform employee to use handwashing sink for handwasing only. A handwashing sink may be used for handwashing only.  Corrected On-Site.  New Violation. 4-2B, Violation of Code: [.05(7)(a)1 ] Coffee mugs, egg mixer cups, plates,and egg pans stored as clean had food debris and grease build-up. Ice chests had build-up inside. Items were cleaned. All food contact surfaces must be cleaned to sight and touch.  Corrected On-Site.  New Violation. 4-2B, Violation of Code: [.05(8)(a) ] Discussed procedure for cleaning waffle pans with person in charge. The procedure is to take pans outside, clean with waffle house spray cleaner, and take inside to rinse. There is not a sanitization step. Sanitizer must be used as the final step in manual washing. Correct procedure was reviewed with person in charge.  Corrected On-Site.  New Violation. 12C, Violation of Code: [.04(4)(m) ] Chlorine sanitizer bucket in kitchen had concentration of 0ppm. A new bucket of sanitizer was made. Sanitizer must be of adequate concentration (50-100 ppm for chlorine sanitizer).  Corrected On-Site.  New Violation. 15C, Violation of Code: [.05(7)(a)2,3 ] Drawers under stove top holding clean dishes have food debris and grease inside. Shelves in dry storage area have dust and other debris on them. Clean these areas. All non-food contact surfaces must be cleaned at a frequency to preclude accumulation of dirt, debris, food particles, etc.  Repeat Violation. 18, Violation of Code: [.07(5)(k) ] Flies were present in kitchen area and dead flies were in hot water in the steam unit for grits. Control/remove the flies. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises.  Repeat Violation.
