Violations: 2-2B, Violation of Code: [.03(5)(j)1&2 ] Employee drink observed under pizza cutting table near to-go boxes. Employee observed drinking from a bottle of water in the prep area with gloves on. Employee removed drink and discarded gloves to wash hands. Employees must consume food in an approved, designated areas separate from food preparation and serving areas. If drinking in the prep area, the employee must drink from a single service beverage cup with a secure lid and straw.  Corrected On-Site.  New Violation. 5-1B, Violation of Code: [.04(5)(f) ] Marinara sauce, cooked the previous night, observed reheating on stove since 10:30 AM. Sauce did not reach 165F or above within 2hrs. Person in Charge discarded marinara sauce. All food items previously cooked and cooled must reach a temperature of 165F or above within 2hrs.  Corrected On-Site.  New Violation. 6-1C, Violation of Code: [.04(6)(d) ] Marinara sauce prepared the previous night observed above 41 degrees Fahrenheit in Reach In Cooler. Person in Charge discarded sauce. All foods must cool to a temperature of 41F or less within 6hrs.  Corrected On-Site.  New Violation. 6-1D, Violation of Code: [.04(6)(i) ] Pizza observed being held on counter using Time as a Public Health Control. Person in charge does not have a written procedure for time control; pizza was not labeled with prep and discard times. When time only is used a public health control, written procedures must be prepared in advance, maintained in the food service establishment, and made available to the regulartory authority upon request; items must also be marked to reflect times prepared and discarded.  New Violation. 6-2, Violation of Code: [.04(6)(g) ] Pre-cooked and thawed italian sausage, ham, and meatballs, and sliced tomatoes were observed in coolers/ refrigerators without proper date labels. Person in charge labeled all the items with appropriate dates. Refrigerated, ready to eat foods held in a food establishment for more than 24 hrs must be clearly marked to indicate the date or day by which the food must be consumed or discarded with a maximum of 7 days including day of preparation.  Corrected On-Site.  New Violation. 8-2B, Violation of Code: [.07(6)(b) ] Chemicals observed in spray bottles under three compartment sink that were not properly labeled. Person In Charge labeled spray bottles. All chemicals must be labeled with chemical common name when removed from original containers.  Corrected On-Site.  New Violation. 8-2B, Violation of Code: [.07(6)(g) ] Chlorine sanitizer observed at 200 ppm. Person in Charge discarded solution, and created solution at proper concentration. Chlorine sanitizing solution must be prepared to a concentration of 50-100 ppm.  Corrected On-Site.  New Violation.
