Violet Hour Beverage Director Robby Haynes Leaves for New Venture
One of Chicago's most famous mixologists left the Wicker Park staple Monday for a new project. Could it be the rumored Logan Square venture?

One of Chicago’s hottest mixologists Robby Haynes shook cocktails for the final time at Violet Hour Monday, telling Chicagoist he’s moving to a soon-to-be-announced venture.
Haynes, the hotspot’s former beverage director, has been working at the Wicker Park staple for six years. Violet Hour is a cocktail lounge known for its innovative, meticulous drinks.
But what will be the head bartender’s next career move? Word on the street is that multiple bartenders from Violet Hour are working on a new venture in Logan Square slated to be “a lounge focusing on a line of craft cocktails.”

The space may be setting up shop in the former home of Las Islas Marinas at 2523 N. Milwaukee Ave. It’s rumored to featured partitions and extra-high backed chairs to create the feeling of intimate rooms, as well as a broken-down bar.
It has not yet been confirmed if Haynes is a part of this venture. He worked at Violet Hour in Wicker Park since initially starting as a barback.
