Amazing Kale Burger Hits Fundraising Goal for New Howard St. Restaurant
The burger, currently offered at other restaurants and a farmers market, will get its own home next month.
The Amazing Kale Burger, which hopes to open its healthy, veggie- and vegan-friendly restaurant on Howard Street in November, has reached its fundraising goal with a few days to spare.
Chef Brandon Byxbe has been selling his burgers at the Logan Square farmers’ market, natural food stores and a handful of restaurants, including Evanston’s Peckish Pig. In November, he hopes to open a home for the burgers at 741 Howard St.
To do so, he launched a Kickstarter campaign to help buy a large steam kettle and commercial convection oven to keep up with the demand that the restaurant will present.

With four days left to go in the campaign, he has exceeded his $5,000 goal.
