Amazing Kale Burger Opening on Howard in November
The burger, which is sold at a farmers' market and other restaurants, will have its own lunch counter.

The Amazing Kale Burger, which is offered at the Logan Square farmers’ market, natural food stores and a handful of restaurants including Evanston’s Peckish Pig, will soon have a home of its own.
Chef Brandon Byxbe is planning to open a lunch counter for his burger, along with other veggie and vegan-friendly fare, at 741 Howard Street, according to Chicago Eater. The restaurant will have 15-20 seats.
Byxbe has launched a Kickstarter campaign to help buy a large steam kettle and commercial convection oven to keep up with the demand that the restaurant will present. As of Thursday afternoon, he had a little over half of his $5,000 goal with 18 days to go in the month-long campaign.

In a video on the Kickstarter page, Byxbe explains that he created his burger after eating frozen commercial veggie burgers and finding that “they all were terrible.” Of the equipment he needs for his new space, he says: “those two items would drastically make my life so much easier. And more kale burgers could be made and more people could eat them and everyone would be happy.”
