New Pizza Place Coming To La Grange
Owner hopes to open restaurant by the end of the month.

LA GRANGE, IL — Bill Wilson had never gone to a pizza place with a wood-fired brick oven until he visited San Diego on a family vacation about two decades ago. He was sold on the concept. Eight years later, he opened his first Billy Bricks Wood Fired Pizza in Lombard. Over the years, he has established five more locations in the suburbs.
Wilson aims to open a Billy Bricks at 18 W. Harris Ave. in La Grange by the end of September.
"That's what I'm hoping for. We're just about there. We are at the tail end of inspections," Wilson said in an interview Thursday.

His business is expanding further, with plans to open a location in Clearwater, Fla., in November. It also has three food trucks with brick ovens, Wilson said.
With its Neopolitan-style pizza, the La Grange restaurant is taking the place of Fireside Wood Fired Pizza & Cafe.

"Our pizza is really nothing new," Wilson said. "This is what they were doing in Italy 2,500 years ago. Our pizzas bake in 90 seconds in the oven. It's pizza the way it was meant to be. It sets our pizza apart from others. Our dough is made fresh every day."
