Glazed & Infused Drops Intelligentsia for Bow Truss, Scouts Lake View Location

The Chicago-based doughnut shop says they want a local roaster, and as Intelligentsia moves into the New York and Los Angeles markets, they aim to support small business.

The Chicago-based doughnut favorite Glazed & Infused is rapidly expanding in Chicago, and that means new locations and a big change in coffee.

The company announced Wednesday it plans to stop serving Intelligentsia coffee in favor of Lake View’s Bow Truss coffee roasters. Starting Friday, all four locations will make the change, and according to general manager James Gray, it’s about supporting small business.

"(Intelligentsia was) once a small Chicago company that grew to a position in their market, but we felt that given our place being so small and growing, we wanted a partnership with someone who is also growing," Gray told DNAinfo Chicago.

Intelligentsia recently expanded into the New York and Los Angeles market.

What’s more is the company plans to open two more locations in Chicago. Glazed & Infused started in Wicker Park in April 2012 has opened three other stores since then. Now owners are planning expand into River North in July at the Courtyard Marriott, and in Lake View.

Gray told Patch in January that he was scoping out small locations in East Lake View that could function as an “in and out” storefront. According to DNAinfo, Gray is still on the hunt for a location, but the company may be shifting gears in hopes of having more of a coffee shop-style.

Either way, expect to see Bow Truss served at the new location. Gray and his partners say they believe it’s important that small businesses work together.

“Co-branding and business building relationships are what is driving success more and more these days.”
