May the road rise up to meet you at the Palmer House and the wind be at your back in Chicago
CHICAGO–Executive Chef Stephen Henry, a native of Dublin Ireland, has prepared a full offering of St. Patrick’s Day Specials at Lockwood Restaurant & Bar and Potter’s including a traditional Irish breakfast buffet kickoff at 6:30am on March 12 for Chicago St. Patrick’s Day Parade goers at Lockwood Restaurant & Bar located within the Palmer House, a Hilton Hotel.

Complete with rashers, Irish sausage, black and white pudding, grilled tomatoes, Guinness baked beans, Irish steel-cut oatmeal, fried eggs to order, Irish smoked salmon and Irish soda bread available at Lockwood Restaurant & Bar from 6:30am -12:00pm on parade day.
Henry didn’t stop with breakfast, he created an entire Irish influenced menu available at Lockwood Restaurant & Bar and Potter’s available March 12-March 17, including corned beef & cabbage, fish & chips with Palmer House tartar as well as Guinness pints, Harp draughts, Irish mules and Irish coffee cocktail specials.

Starting at the age of 18 as a chef’s apprentice peeling 50 pounds of Dublin Bay Shrimp, Henry moved up the rungs to the internationally renowned Shelbourne Hotel in Dublin as the Chef Garde Manager. It was during this time that a scholarship was presented to Henry by the National Tourism Authority granting him to come to the United States to work with Hilton Worldwide Hotels where his career ascent began, eventually landing him the Executive Chef position at the Palmer House, a Hilton Hotel.

“Breakfast was one of the most important meals of the day when I was growing up in Dublin. It was only natural for me to want to serve Chicagoans an authentic taste of Irish heritage before taking to the streets to celebrate at the Chicago St. Patrick’s Day Parade, the Chicago River Dyeing Ceremony and leading up to St. Patrick’s Day,” said Executive Chef Stephen Henry.
