Pecan Pie Baked Apples

Ingredients:

  • 8 tbsp butter
  • 8 tbsp brown sugar
  • 2 tsp cinnamon
  • 2 1/2 cup chopped pecans
  • 8 medium apples

Directions:

  1. Preheat oven to 375 degrees.
  2. In a sauté pan, heat butter and brown sugar until slightly caramelized.
  3. Add nuts and cinnamon and toss to coat. *If too liquidy add more crushed pecans.
  4. Remove from heat and let cool.
  5. Cut apples even in half from top to bottom and carefully scoop out the core of the apple to hold the filling.
  6. Place in a shallow baking dish, finish covering the apples with nut mixture.
  7. Bake for 30 minutes, or until soft.
  8. Serve with ice cream while warm.
