Pecan Pie Baked Apples
Ingredients:

- 8 tbsp butter
- 8 tbsp brown sugar
- 2 tsp cinnamon
- 2 1/2 cup chopped pecans
- 8 medium apples
Directions:
- Preheat oven to 375 degrees.
- In a sauté pan, heat butter and brown sugar until slightly caramelized.
- Add nuts and cinnamon and toss to coat. *If too liquidy add more crushed pecans.
- Remove from heat and let cool.
- Cut apples even in half from top to bottom and carefully scoop out the core of the apple to hold the filling.
- Place in a shallow baking dish, finish covering the apples with nut mixture.
- Bake for 30 minutes, or until soft.
- Serve with ice cream while warm.
