CAVA Opening In Nottingham Commons
The new Mediterranean restaurant on Campbell Boulevard is opening this week.
NOTTINGHAM, MD — The new Mediterranean restaurant CAVA will officially open Friday. Before then, the fast-casual eatery is hosting what it calls a "Community Day," when those who RSVP can score a free lunch or dinner while getting a sneak peek at the business on Campbell Boulevard.
At CAVA, diners build their own meals by picking a base of grain, salad or pita; or they can opt for a "greens and grains" bowl or soup and pita combo. Next, people select dips and spreads like tzatziki, crazy feta, eggplant, hummus, red pepper and harissa.
Then they add proteins such as braised lamb, honey chicken, falafel, spicy lamb meatballs or roasted veggies. And finally they complete the dish with cabbage slaw, tabbouleh, Kalamata olives, white bean salad and other toppings.

Given its November opening, the restaurant is featuring its fall menu, which includes a roasted vegetable medley of butternut squash, cauliflower, carrots and Brussels sprouts; Greek minestrone soup; and beet lemonade, cucumber mint lime and apple cinnamon vanilla juice, as well as other options.

CAVA is replacing Zoës Kitchen in Nottingham Commons, the strip mall that also contains Nalley Fresh and Pie Five. In 2018, CAVA acquired Zoës Kitchen.
After some updates, the more than 2,600-square-foot restaurant will offer 52 seats inside, more patio seating outside and a pickup area for carryout and orders made on the app.
It will be the first restaurant for CAVA in Baltimore County. The restaurant reportedly began as a single eatery in Rockville in 2006 and has expanded to include nearly 80 restaurants. Its other Maryland businesses are concentrated in Montgomery County, where it has locations in Bethesda, Gaithersburg, Potomac, Rockville and Silver Spring. It is also in College Park, Columbia, Frederick and Hanover.

Otherwise, the restaurant will be open Friday. It is donating a portion of opening-day sales to the Maryland Food Bank.
CAVA is at 5201A Campbell Blvd, Nottingham, MD 21236. Hours will be 10:45 a.m. to 10 p.m.
