Bedford's Minuteman Diner Preps For Opening
The restaurant markets itself as a "diner by day and tavern by night."
BEDFORD, MA — A new breakfast spot is coming to Bedford and has an opening planned for Friday. The Minuteman Diner will be the town's newest restaurant and it's marketed as a restaurant that serves more than just eggs and waffles.
The Minuteman Diner will be a "diner by and tavern by night," according to it's website. Located at 363 Great Road, Minuteman Diner pays tribute to the Bedford minutemen who marched on foot to Concord during the American Revolution. "Our promise is to always offer a hot breakfast served throughout the day - to honor those that had to settle for a cold breakfast on a journey to save our city and country," the restaurant's website reads.
The diner is scheduled to host a soft opening on Friday and Saturday, serving breakfast only. The official grand opening will be Jan. 14 and breakfast, lunch and dinner will be served. The normal hours will be Tuesday through Saturday 6 a.m. to 11 p.m. and Sundays will serve breakfast only from 6 a.m. to 2 p.m. The diner will be closed on Mondays until March.

The owners of the diner are Diane and Ed Cohen. The couple has lived in Bedford for 23 years.
On the menu are classics like chicken and waffles and biscuits and gravy alongside new creations with cheeky names like the musket breakfast sandwich.
