Brookline's Breadboard Bakery To Leave Cutty's, Open Solo Spot

The Cutty's weekend specialty will soon branch out on its own after three years in Brookline Village.

BROOKLINE, MA β€” Fans of Cutty’s weekend β€œBreadboard Bakery” treats, brace yourselves: The kolaches, wacky cake and cinnamon rolls you have come to expect will only be available at Cutty's for the next two weekends. Cue the stampede. The good news is that starting this fall, baker Daisy Chow will be opening her own shop. Chow told Patch she signed a lease and needs the time to prep for the new brick and mortar.

Not only will Chow be serving up her kolaches, wacky cake and cinnamon rolls in the new location, but she'll also be serving up what she most loves to create β€” artisan bread made from local grains, baguettes and a number of different types of croissants. She'll also have a small menu of sandwiches (on her homemade bread) as well as coffee.

Chow won't say where she's moving just yet, but she said she's looking forward to having a space and equipment to call her own.

Chow has also worked for Clear Flour Bread for the past decade and some change. But she only began making her unique limited-edition breakfast treats for Cutty’s as a weekend popup in 2016 under the tutelage of Rachel and Charles Kelsey as she hunted for a permanent spot. They regularly sold out.

"It will be sad to leave [Cutty's and the Kelseys] because it's nice having their camaraderie and feedback, but I'm ready to start my own bakery," said Chow.

Each Breadboard Bakery good is individually hand-made and -shaped by Chow. But in order to up her production, Chow will be investing in some professional equipment and an experienced staff. Watch for a Kickstarter on that, soon, she says.

While Breadboard Bakery will not be located in Brookline, Chow said she won't be far.

"Thanks for all of your support and for eating all of my baked goods," Chow says to all the folks who have come in to the Brookline Village spot to try them. "We'll look forward to seeing you in our new space, to be announced very soon."

You might remember that Cutty's also helped launch "Bagelsaurus" the popup turned brick and mortar bagel joint, just before Breadboard Bakery came along. Pop ups like this are often a low-risk way for new restaurants or bakers to gauge the public’s response before heading out into their own. In Brookline, the Kelseys have served as resource and sounding boards on opening and running a successful small business.
