Zoning Amendment Approved To Allow Coffee Roaster In Marlborough

Lost Shoe, a brewing and coffee roasting establishment, still plans to open this fall.

MARLBOROUGH, MA—A zoning amendment has been approved that allows for a coffee roasting company to open up in Marlborough, according to reports.

Earlier this month, Marlborough City Council approved an amendment that allowed Lost Shoe Brewing and Roasting Company to follow through with its permit to open on Weed Street this fall, reports MetroWest Daily News. Because of odors coffee roasters may create in the neighborhood, they are now required to apply for a special permit.

Not only will Lost Shoe roast coffee, but brew beer at this 4,600-square-foot facility.

Husband and wife team of Melynda and JP Gallagher said they are excited to bring new lifeto the city and hope to attract both locals and first-time visitors to the downtown area.

"We plan to be open before the end of the year, with construction completed by early November," Melynda told Patch.

JP, a recent graduate of the American Brewers Guild, plans to offer a variety of rotating beer styles, with traditional Belgian and German styles featured along with more experimental beers including New England IPAs and stouts brewed with coffee. Melynda, who studied at the Coffee Lab International, plans to highlight single origin roasts from all over the world using various brewing methods including pour over, espresso, and cold brew.
