Pandemic Cooking and Scholarship Announcement

from the Wakefield Sons & Daughters of Italy

What do you get when you combine two vegetables, three cheeses, breadcrumbs, eggs, spices, marinara and a Zoom call? For the members of the local Sons & Daughters of Italy and friends, the end-result was a delizioso Eggplant Rollatini. Led by members/Chefs Laurie and Ollie Rizzo, attendees could prepare a meal at home. The Chefs gave a live demonstration and answered questions. Some Rollatini came out better than others, and the group enjoyed some laughs. The good news is, if anyone decided cooking this dish was not for them, they could always order it from Laurie’s 909!

The February meeting was held on February 9th via Zoom again. The guest speaker was Joseph Sciame, President of the Sons of Italy Foundation (SIF) and National Past President. SIF is a 501(c)(3) organization and the philanthropic arm of the Order Sons and Daughters of Italy in America (OSDIA). SIF was founded in 1959 as a private, grant-making institution with the purpose of preserving Italian-American culture, encouraging education excellence among Italian Americans and improving lives in other areas.

To date, the SIF has given more than $164 million to these efforts. OSDIA owns and operates the wonderful Garibaldi-Meucci Museum on Staten Island. James shared the programs and history they offer there. A virtual tour is available on YouTube.
