Baffin Brewing Co. Turns Paczkis Into Beer

A St. Clair Shores brewery found a novel way to observe paczki day - they made the filled pastries into beer.

St. Clair Shores’ Baffin Brewing Co made headlines with its special approach to the humble paczki - the filled Polish pastries that resemble jelly donuts. While many in Metro Detroit flocked to Hamtramck for paczki day yesterday, the Mardi Gras or Shrove Tuesday celebration took a boozy turn in St. Clair Shores when Baffin partnered with Brew Detroit to turn 40 lbs of paczkis into beer.

A video posted to Baffin’s Facebook page that has had over 20,000 views in under 24 hours shows the brewers tearing the pastries and mixing them by hand. The announcement accompanying the video reads “Making a Paczki Stout in collaboration with Brew Detroit!! We mashed 40lbs of Paczkis to create this unique beer. Should be out in the next 3 weeks!”

Baffin Brewing Company began in 2009 in the apartment of college roommates Joe Dowd and Evan Feringa. After graduating Michigan State and working on their craft, Dowd and Feringa opened Baffin’s St. Clair Shores tap room in 2015.
