Quesadillas Doña Meche Brings Authentic Mexican Food To Lacey

The Bonilla family makes everything on site, and that includes a secret recipe that goes back generations.

LACEY, NJ — Quesadillas is the shorthand for Lacey's new Mexican restaurant. But the authentic menu isn't possible without Doña.

Leo and Doña Bonilla held the grand opening Oct. 11 for Quesadillas Doña Meche on 629 Main St. Everything gets made on site, including the tacos, sopes and chips. But much of its uniqueness comes from the tortillas.

"The tortillas are a secret family recipe that have been passed down for more than two generations," Leo Bonilla said via a translator, marketing director Michael Rodriguez. "The restaurant is named for Doña Meche, because she has the secret ingredient in her brain."

The Bonilla family started the restaurant after seeing a need in Lacey not only for authentic, Mexican food but for spicy cuisine. Quesadillas begins making food every day at 5 a.m. before opening their doors from 11 a.m. to 9 p.m. Tuesday through Sunday.

But the restaurant has faced hurdles since opening, including critiques from customers about long wait times. But they're trying to slowly accommodate more business going forward, Rodriguez says.

They're also working on their menu. Many authentic, Mexican restaurants don't let customers modify menu items, Rodriguez says. But Quesadillas has found many customers want to, especially when ordering for their children.

"It’s nothing against the customer, but I’ve been to some authentic Mexican restaurants where they get mad if you order something different from what’s on the menu," Rodriguez said. "We try to be accommodating to the local demographics and also support authentic Mexican cuisine."
