Elsie's Pickle Sandwiches To Open In Atlantic Highlands

ATLANTIC HIGHLANDS, NJ — Good news if you love pickles: Elsie's pickle sandwich shop, a South Jersey small business that attracted viral Internet fame due to their sandwiches on pickles — not bread — will be opening an Atlantic Highlands outpost this summer.

The new local Elsie's will be located at the site of the former Bellissimo salon at 131 First Avenue in Atlantic Highlands. It aims to open sometime this summer, said Katherine Cohen, who started the Elsie's with her husband, Chad Jordan.

Elsie's got its start in Haddon Twp. In 2021 the company decided to offer franchises, she said, and that's when a second location, in Northfield, also South Jersey, opened. The Atlantic Highlands spot will be the third Elsie's and their second franchise.

Elsie's serves cold cuts and sandwiches offered on their own, homemade, house-cured pickles. But they are now expanding to offer sandwiches on cucumbers and other vegetables as well. They also serve pickle and cucumber roll-ups.

"We have no bread in any of our locations. We are a sanctuary for people who have diabetes, dietary restrictions, food intolerances and ... people who just like our pickles!" said Cohen.

According to Cohen, the idea started at a general store her parents used to own in Linwood.

"My mom has diabetes and I am always trying to find ways for her to eat better, so I made her a sandwich on two pickles. She was eating it one day and a customer came in and saw it and ordered ten for her office," she said. "She took a photo, posted it on social media and it just blew up from there."

She said after seeing how popular the sandwiches were, she and her husband "resurrected an old family pickle brine recipe" and started making the pickles in batches.

Elsie's also sells cocktail mixes, such as straight pickle brine, Elsie's Pickled Surfer, made of pickle brine, lime and jalapeno, which is mixed with vodka, tequila or whiskey; brine-spiked Bloody Mary mix and also Elsie's Piney Barron, made of pineapple, Elsie's brine with jalapeno and lime.

"I can tell you that all of our sandwiches are works of art and are delicious," said Cohen. "Also, our sandwiches are huge."
