New French Bistro Opens In Downtown Princeton

The menu offers a fresh take on a traditional French bistro menu and the zinc bar features a 100 percent French wine list.

PRINCETON, NJ — Kristine’s, a new French bistro, has opened in downtown Princeton. The restaurant will be open seven days a week for dinner and will offer lunch and breakfast in a few weeks.

The new restaurant at 51 Witherspoon St. features Chef Nicolas Démurgé who is bringing fresh ingredients, fresh ideas, and a fresh take on a traditional French bistro menu. The menu will also feature healthy food options, featuring vegan, vegetarian, dairy free and gluten-free items alongside more traditional classics.

The U-shaped, zinc bar features a 100 percent French wine list, creative cocktails highlighting many French liquors and beers from France, Belgium and the U.S.
