Local Follows Dream, Opens Firehouse Subs In Union On Friday

A former scientist, John Li of Long Valley is excited to follow his food dream and open his first sub shop in Union on Friday.

UNION, NJ — Former scientist and lawyer, John Li is drastically changing career paths and following his food dream by opening his first Firehouse Subs location in Union on Friday.

The new location is the first in Union at 1235 W. Chestnut St., Suite 5C. Firehouse Subs serves meats and cheeses steamed on a toasted sub roll, served with fresh produce and condiments. In addition to its signature subs, the restaurant offers a variety of catering options from sandwich and dessert platters to salads and snacks.

Li graduated from Harvard Medical School and received his Ph.D in 1990. He eventually served as an attorney in Massachusetts for 20 years before moving to Long Valley with his family.

During his career, Li had always loved food and always dreamed of opening his own food business. Now he is doing just that with the Firehouse Subs location.

"I’ve always been motivated by what I can be passionate about and what brings me joy, and I’m confident I’ve found both with my first Firehouse Subs restaurant," Li said. "This is very different from what I’ve done in the past, but from the outstanding food to the genuinely friendly customer service, I’m excited to take on this new journey and serve the community of Union."

Li noted that the steaming of the meat and cheese allows Firehouse Subs to stand apart as it allows it to be fully warmed while served up on a toasted roll.

The most popular sub is the Hook and Ladder, which is a ham and turkey hot sub with Monterey Jack cheese.

Li’s favorite is one he customizes — turkey and tuna. He says any sandwich can be customized for customers and is another reason he feels Firehouse Subs stands apart.

The Union Firehouse Subs restaurant is open from 10:30 a.m. to 9 p.m. Sunday through Thursday and from 10:30 a.m. to 10 p.m. on Fridays and Saturdays. It will offer in-house delivery as well as catering services.
