You might know this joint as the cafe from Breaking Bad, but it's actually a really good place to get breakfast of any kind. They serve "French style" pancakes according to their menu. These are basically thicker crepes.
These delicious stacks come with fruit, creme fraiche, and house-made green chile in a tortilla as a side. While these aren't you typical pancakes, they're still going to be the best you could find in Albuquerque.

2. Palacio Cafe
While we all know the Palacio Cafe as a place to get the best of New Mexico breakfasts, you'd be surprised that their short stack of pancakes is the best you could find in Santa Fe. There are no frills here. Just delicious pancakes with syrup and butter. But you'll want twenty more after you finish the traditional three.
3. The Chocolate Maven
What better place to get pancakes than a bakery, right?
Funny thing is, this bakery doesn't serve your typical pancakes. If you're looking for typical pancakes, you should head over to Palacio. On Maven's brunch menu, you'll find blue corn pancakes.
This is a New Mexico tradition up there with Green Chile. The weird thing is, very few people have heard about it.

Saveur does things a little differently. You pay by the weight of your plate kind of like a froyo place. This means you can eat as many pancakes as you want.
