Brooklyn Holiday Recipe: Roast Chicken From La Cafette

BROOKLYN, NEW YORK -- The first step to a great chicken is a great chicken.
That's the advice from co-chefs Jean-Marie Perrot and Sylvain Aubry, who routinely serve humanely-raised rotisserie birds at their Williamsburg restaurant, and are contributing the main dish in Patch's Holiday Recipe Round-up.
Their simple yet savory recipe calls for few ingredients, many of which you might already have in the fridge, so it makes sense that you choose a choice chicken.

But do note that the other key ingredient is time: the humane bird must soak for eight hours and dry for one.
La Cafette's Roasted Chicken
Prep time: 8 hours (To sit)
Cook time: 1 hour
Serves: 3-6 people

Ingredients:
- 1 liter water
- 1 liter buttermilk
- Pinch of minced garlic
- Pinch of lemon zest
- Pinch of salt
- 1 humanely-raised full chicken, ideally Amish
Directions:
- Buy a humanely-raised, ideally Amish, chicken.
- Soak the chicken in a large container with water, buttermilk, garlic, thyme, lemon zest, and salt for eight hours.
- Take out the chicken and allow it to dry for one hour.
- Preheat your oven to 400 degrees
- Roast your bird for one hour
- Bon appetit!
