
This week's column should be called "The Best Thing We Ate This Month" because the panelle sandwich at is, quite literally, the most delicious thing I've eaten in quite some time. The flavors were in perfect balance and, how can I say this, the sandwich just made me feel good.

Brucie's take on the sandwich is inventive and fresh. Thin, crispy sheets of panelle (fried chickpea flour) are topped with lush ricotta, fragrant honey and sweet peppers. The airy seeded roll is both chewy and light with a crispy exterior.

I'm a big fan of the ricotta/ honey combo. They do it on crostini with black pepper at , too. But with the snappy bite of sweet peppers and the greasy chew of panelle, the combo is better than ever.
