Carroll Gardens Brewery To Make Beer Using Bagels
Folksbier will brew new flavors of beer using bagels from the NYC chain Black Seed, which recently opened its first Brooklyn location.

CARROLL GARDENS, BROOKLYN — Forget bagels and coffee, a local brewery will make bagels and beer the new go-to pairing when it uses bagels from chain Black Seed to create a new brew.
Luquer Street brewery Folksbier has partnered with the bagel chain, which opened its first Brooklyn spot just last month, to create a new beer brewed with parts of bagels instead of wheat, Black Seed announced Tuesday.
The new brew will be featured in a tasting event this weekend.

It will be made from Folksbier's Berliner Weiss-style sour wheat beer, but use multiple types of Black Seed bagels — except everything bagels — instead of part of the wheat usually used in the brew. The beer will then be re-fermented with honey instead of its fruit, as it typically is, which Black Seed said matches with its own bagel-making process.
"While they typically re-ferment and condition Glow Up with fruit, they thought it would be an interesting experiment here to try honey instead, and transferred the beer onto honey once primary fermentation tailed off — reflecting a full circle process, as Black Seed’s bagels are boiled in a solution of honey and water prior to baking in a wood-fired oven," the company said.

The end result will be a brew that is slightly hazier than Folkbier’s standard Glow Up brew because of the long proteins and gluten in bagels.
The tasting will be from 12 to 4 p.m. on Saturday at the Folksbier tasting room at 101 Luquer Street. It will also include beer-boiled bagels as tartines and bagel chips, which Black Seed said is another way it recycles its bagels.
"The beer partnership represents just one way that Black Seed has dedicated itself to running their business as sustainably and locally as possible, always looking for ways to minimize waste and keep their supply chain close to home," the company said.
Those who cannot make it to the tasting can also buy the beer starting Thursday at restaurants and bars including Grand Army, Celestine, The Smile, Old Rose, the outstanding Midtown beer bar As Is, and Otto’s Market in upstate New York.
Black Seed bagels has four locations in Manhattan and most recently opened its first Brooklyn location at 123 Court Street.
The bagel chain has a signature take on New York-style bagels, by blending the baking techniques with those of Montreal. Chef Dianna Daoheung's unique style brings together New York's light and airy texture and salted, naturally leavened dough with Montreal's method of boiling the bagels in a kettle solution of water and honey and baking them in a wood-fired oven.
