CENTER MORICHES, NY — Just in time for summer, a new, rolled ice cream shop is set to open its doors in Center Moriches.

Owners Evelyn and Richard Morales said they are aiming to unveil The Rainbow Rolls, located at 333 Main Street in Center Moriches, by Memorial Day weekend or early June, depending on when permits are received.

"My husband and I are big foodies and love sweets," Evelyn said. "We visited Miami and had this ice cream there for years and when we went to Vegas and saw them do regular ice cream on a waffle taco we put the two together to create The Rainbow Rolls."

The ice cream will be available with three bases — vanilla, chocolate, and a vegan option – and created by mixing in toppings such as banana/Nutella, strawberry, blueberry, chocolate, or peanut butter. A total of 15 menu items will be available; patrons can also create their own ice cream, which is served in a cup or a "colorful taco," Evelyn said.

The couple also owns an Argentinian catering company, El Che Argentinian BBQ, Evelyn said. "So this is not our first time as business owners — but it is our first store," she said.

Evelyn taught preschool for 10 years, then became a nanny; Richard is a real estate paralegal. The two were imbued with "entrepreneurial influences" from both sets of parents as well as some good friends, she said.

Evelyn was born in Argentina but moved to Hampton Bays in 2001. Richard was born in Boston but lived back and forth between there and Costa Rica before moving to Southampton permanently about four years ago, Evelyn said.

Center Moriches holds deep meaning for the couple, she said.

"We’re just excited to bring something new and cool to the community. Our first apartment together was in Center Moriches, I was a nanny for the first time in Center Moriches — and we just always loved the atmosphere and the community," she said.
