Commack Couple Creates Craft Cookie Company

The Kookie Jar LI, launched this summer by a husband-wife team, features an assortment of stuffed cookies available for pickup or delivery.

COMMACK, NY — Kim Kornfeld's cookies have more fans than she could have ever imagined. What started out as her baking for friends and family — most notably, her husband, Alec — has turned into a startup business where stuffed cookies are sold throughout Commack and beyond.

Kim has always been fond of baking. It's a skill she learned from her mother, who made sure Kim grew up surrounded by sweet treats. Eventually, Kim began baking classic chocolate chip cookies for her husband, she said.

"Alec was always saying to me, ‘Why aren’t you selling these? They’re really, really good,’" Kim, 30, told Patch. "I always made the joke that he’s just biased and has to say that; he’s just being nice. But then all my friends and family said the same thing."

When the coronavirus pandemic hit, and everyone was effectively isolated in their own homes, Kim and Alec began experimenting. She made Italian rainbow cookies from scratch and began stuffing them into larger cookies.

Thus, The Kookie Jar LI was born in June.

"We started to stuff cookies with all of these crazy ingredients, and it kind of just took off from there," Kim said.

Flavors include The Italiano, the rainbow cookie-stuffed flagship; The Original chocolate chip; Peanut Butter Cup; The Campfire s'mores cookie; Cinnamon Bun Swirl; and plenty more. The King features a chocolate chip cookie stuffed with an Oreo, rolled in sprinkles and topped with a peanut butter cup.

Those interested in purchasing the $5 to $6 cookies should set an alarm for 6 p.m. on Tuesdays, which is when orders are opened for the week's restock on The Kookie Jar LI website.

Shipping is not currently available, and delivery is limited to within 15 miles of Commack, according to the business's frequently-asked questions section. Pickup is currently in front of the Commack Library, at 18 Hauppauge Road, and usually on Fridays.

It's unknown if or when the company will offer shipping. However, delivery expansion beyond 15 miles of Commack may happen "at some point in the near future," Kim said, citing high demand.

Kim works full-time in addition to baking from her home. As of now, the cookie venture is a two-person team: her and Alec. Extra hands could be brought on should the demand of cookies continue to climb, she said.

The support that the startup has received from friends, family and the Commack community in general has been amazing, Kim said.

"People have been loving it and telling their friends and families," she said. "We’ve done so many parties already. It’s been really, really exciting to get all of this support so quickly."

The pickup and delivery system puts Kim at ease, as she doesn't have to worry about the funds that come with operating out of a brick and mortar.

"It’s also a better service to have pickup and delivery, because this way, it’s done exactly when people need it," she said. "People know we can just drop it off whenever it’s convenient for them or they can pick it up whenever it’s convenient for them. They don’t have to worry about going into a store, because we don’t have a storefront."

Despite already having a variety of flavors, fans of The Kookie Jar LI can expect even more innovation in the future, according to Kim.

The company is continuing to look to find ways to expand. It saw a 55 percent increase in social media followers overnight after it was featured on the Long Island Foodie TikTok, Kim said.

The startup will head to the upcoming Levittown Farmer's Market at Good Shepherd, scheduled from 10 a.m. to 2 p.m. Oct. 10. It will mark the first time The Kookie Jar LI will be available outside of its usual pickup/delivery system.
