WINDSOR TERRACE, BROOKLYN — A new French café opened last Friday in Windsor Terrace, the work of two restaurateurs with several other businesses to their name.

Years ago, Dominique Drevet opened the former Bistro St. Marks in Fort Greene, where Gregory Tetaud came to work. Drevet is still a wine seller, while Tetaud is now the owner of Le Paddock in Windsor Terrace.
Tetaud told Patch that he often takes his child to P.S. 130 in the neighborhood, and noticed that there wasn't a nearby café or coffee shop. So he reached out to Drevet, and the two formed a partnership.
Parade Café, located at 622 Caton Ave., aims to open Friday morning, the duo said, and will remain open from 7 a.m. to 7 p.m. seven days a week.

It will serve a variety of La Colombe coffees, the owners explained, and in the morning will offer croissants, quiche, BLTs, avocado toast, and other breakfast foods.
After 11 a.m., it will switch to its lunch service, which will include salads and sandwiches, all made with fresh ingredients.
The exact menu is still being worked out, but Tetaud and Drevet said it will be French-inspired, and mentioned a sandwich made with spicy merguez sausage, brought to France by immigrants from north Africa.
For now, the café won't serve wine, but the owners said that could change in the future.
One other note for those seeking work: Parade is looking to hire another kitchen employee with relevant experience, so if you're interested, swing by the restaurant.
