New Tonkotsu Ramen Eatery Opens In Murray Hill

In Murray Hill, Tenho Ramen will serve a specialized style of ramen originally from Kurume, Japan.

MURRAY HILL, NY — A Tonkotsu ramen eatery opened in Murray Hill, bringing a specialized style of ramen to Manhattan's east side.

Tenho Ramen is Murray Hill's latest ramen eatery on Third Avenue at East 36th Street.

The restaurant will specialize in a style of ramen broth originally from Kurume, Japan. Its ramen broth will be a rich and creamy broth with pork bones, which is made using a method called "yobimodoshi." Under the method, chefs use remaining broth to begin the next morning — continuously adding fresh Tonkotsu broth to bring out its richness and flavors.

The restaurant says Tenho Ramen, located at 542 Third Ave., is the first restaurant to specialize in this specific style of ramen in New York.

Chef Takafumi Hayashi brings his ramen expertise to New York City after two decades at Taiho Ramen, a Kurume-style ramen restaurant that opened 70 years ago in Kurume.

Tenho Ramen will also serve sake and shochu for drinks as well as kushiyaki, or grilled skewers.

The 43-seat restaurant has already opened its doors for a soft opening, but will hold its grand opening July 24.

Its hours are 5 to 10 p.m. The restaurant will serve lunch beginning August 5.
