Michelin-Star Chef Opens Brooklyn Bridge Park Waterfront Eatery

The Queens chef, who has also owned Manhattan restaurants, opened Estuary in One Brooklyn Bridge Park.

BROOKLYN HEIGHTS, BROOKLYN — A new bistro that has opened on the Brooklyn Heights waterfront has no shortage of award-winning chefs.

Estuary, an eatery that recently joined new development One Brooklyn Bridge Park, is headed by James Beard Award-winner chef Francois Payard and Danny Brown, who earned a Michelin Star for one of his restaurants in Queens.

The new spot opened in the northwest corner of the building, which faces the ONE°15 Brooklyn Marina at Brooklyn Bridge Park, which became the city’s first new marina in decades when it opened at full capacity this year.

Estuary's menu will feature a seafood raw bar, including oysters from Long Island's Picnic Bay, along with sandwiches, burgers, seasonal salads and a range of "flat tarts." Payard will serve as the restaurant's culinary director and Brown will join as the executive chef.

Payard will also oversee a neighboring "grab-and-go" addition to the building called Ebb and Flow. There, parkgoers and boaters can drop in to pick up more quick dining options.

“The world-renowned Payard brings decades of experience and award-winning recipes to our Brooklyn location, where his French-inspired fare, locally sourced ingredients and unique menu design will please boaters, New Yorkers and ONE°15’s many guests,” Estelle Lau, ONE°15 Brooklyn Marina’s deputy CEO, said.

Payard was named “Pastry Chef of the Year” by Bon Appetit and “Pastry Chef of the Year” by the James Beard Foundation at Restaurant Daniel.

Danny Brown, formerly Chef-Owner of Charc on Manhattan’s Upper East Side, earned his Michelin Star at Danny Brown Wine Bar & Kitchen in his native Queens.

Estuary's 5,000-square-foot space at the marina includes 150 seats and a nautical-inspired atmosphere. Inside, there will be a wrap-around cocktail bar, the raw bar as a standalone feature and an ice cream sundae station.

Diners can also sit outside at a 48-seat outdoor cafe option, where the waterfront access will offer views of the Manhattan skyline.
