"We had one of those fantastic opportunities for a new path. This next part is going to sound sad but, so many businesses closed that there is a ton of available retail space," Muino told Patch. "Island Empanada Stores thrived during the pandemic due to its take out services and the way the product travels to be delivered in excellent quality."
The chain has locations in Ronkonkoma, Merrick, Deer Park, Shirley, Medford, Rocky Point, Huntington, and Commack.

Now with the new location in Lindenhurst, the Muinos will be returning to a place that is meaningful to the couple. The two lived in the area for 8 years before moving out east.
"[Lindenhurst is] special place that is in the middle of a revitalization now," he said. "Many new businesses joining long time favorites."
The eatery offers a variety of empanadas for everyone, including eight meatless options and two vegan empanadas. According to Muino, customers will get a "taste of the islands in every bite."
"If you have ever been to the Caribbean, you would know what we mean," he said. "If not, now you can try a great sample without the airfare."
