Center Cuts, New Butcher Shop, Coming To North Fork

MATTITUCK, NY — A popular butcher in Roslyn Heights will be opening a second location on the North Fork soon.
Center Cuts is a gourmet butcher and sandwich shop with a full line of high-end meats, including prime, dry-aged, and Wagyu beef, said owner Justin Aronoff, 27.
Aronoff opened his first location in Roslyn Heights seven years ago when he was just 20, he said. A graduate of Roslyn High School, he's been working in butchers and delis since he was 15 years old, he said.

The new Center Cuts, which will be located at 11155 Main Road, just east of the Mattituck Plaza shopping center, is slated to open in May, with the exact date expected to be announced this week. Hours will be 9 a.m. to 7 p.m. Monday through Thursday, 9 a.m. to 6 p.m. on Fridays and Saturdays, and 9 a.m. to 5 p.m. on Sundays, Aronoff said.
His plan is to follow the business model of what's been done in Roslyn; Center Cuts also offers catering for barbecues, cocktail parties, weddings, Sweet 16s, bar mitzvahs and more, he said.

The shop also serves up a full menu of burgers, hot dogs and sandwiches; at the new location, the expanded space will allow for a far larger selection — two 8-foot cases — of prepared foods, including salads, sides, chicken parmagiana, and other meals, Aronoff said.
Some sandwich favorites include "The Steak & Cheese," as well Philly cheese steak sandwiches made from rib eye cuts and shaved razor thin, Aronoff said.
Brian Von Derlinn of the recently shuttered Libery Links in Freeport will manage the new Center Cuts location and bring his well-loved Gallucci sausage sandwich to the North Fork, Aronoff added.
In addition, Center Cuts will offer charcuterie boards, sandwich platters and salads to go, perfect for beach and winery days.
Center Cuts will offer delivery on the entire North Fork and to Shelter Island, on select days.
The North Fork has a dearth of butcher shops, Aronoff said. "That's why we felt it was the perfect location. We've been delivering out east for years now for a long time and we've had customers asking us to come out now. We finally decided to make the jump."
Aronoff said his whole family is very proud of his success. "They're very excited."
He'll be spending time at both locations, and credits his "phenomenal team and management" at the Roslyn Heights location with affording him the ability to spend time on the North Fork, especially during the opening months.

As for Aronoff, he can't wait to welcome North Fork customers into the new shop: "We’re excited to provide you guys with a phenomenal, top-of-the-line product that we think is well-needed," he said.
