Post Pandemic Peekskill: Outdoor Dining With A Hudson River View

PEEKSKILL, NY — Take a deep breath and look at the Hudson River. The Abbey Inn & Spa started dining service on Tuesday at its restaurant Apropos.
“We have carefully considered the safety and health of our patrons and staff in planning our outdoor service, which complies with all the rules set by state health officials,” said General Manager Gilbert Baeriswil. "We invite the public to come and enjoy delicious meals inspired by the bounty of the Hudson Valley."

Outdoor dining at The Abbey Inn & Spa is on the Grand Terrace. The Abbey will also offer outdoor bar service on Thursdays, Fridays and Saturdays, although no one will be allowed to sit at the bar.
Food and beverage orders will be taken at the outdoor tables and the orders will be brought to the tables by staff. The food will be served in takeout containers.

The hotel is using banquet tables and folding white chairs. The dining furniture will be easy to sanitize because the chairs are waterproof and made of resin, while the tables will be covered in vinyl, restaurant officials said.
The Abbey Inn & Spa’s signature dining concept, Apropos, combines chef-driven cuisine with breathtaking views of the Hudson. Headed by Executive Chef John Paidas, this elevated, contemporary-American eatery features Mediterranean-influenced and locally sourced ingredients.
